Ok so the number one thing all you guys need to know about me is: I love food!! But I’m also very strict with my diet and strive to eat as clean as possible. However, there are ways to still eat clean and have fun with food! I found this recipe for pancakes… Yes, pancakes! They are the bomb, you guys will thank me;)

Carrot Cake Pancakes with Cream Cheese Frosting… Yup!!!!

Carrot Cake Pancakes:
-Blend the following :
1/3 c dry oats
3/4 scoop of vanilla protein
1 t baking powder
1 packet of stevia
-Once those are blended add and mix:
1/4 c unsweetened carrot baby food
1 whole egg
1 egg white
3 T almond milk
-Blend again
-Now, add a few T of grated carrots and 1 T of raisins into the mix
-Pour onto a heated griddle, on low to medium
-Once cooked, add frosting

Coconut Cream Cheese Frosting:
-Mix:
1/4 c plain nonfat Greek yogurt
Few drops of liquid stevia
1 t unsweetened coconut flakes
1 T sugar free Jello pudding cheesecake mix

Feel free to garnish with walnuts, coconut, raisins, etc! Now go enjoy those pancakes , you earned them!!
